I made a similar suggestion to this awhile back in an old discord suggestion, so I’m going to copy/paste it here.

When/If mooshrooms are ever added to open world, I hope they’ll come with variants. Do we need more cows? Nope, but the collector in me wants all the mooshrooms. I think a neat way to implement them is the same way as the mooblooms, feed mooblooms a mushroom and it'll appear on their back (though will vanilla brown ones still need a shock to get that variant? ), give them a different mushroom turns into that variant (Not sure if should go back to a moobloom or just a normal cow when shearing it, after it's been 'infected', since mooblooms turn into normal cows once sheared, same as vanilla mooshrooms).
I left out a mushroom to have an even 6 to show for this concept, but you get the idea on their look. My main desire for mooshrooms is a custom designed to be highland like cows. They'd have long mossy like fur that the mushrooms grow from. I made their legs to match the stems of the mushrooms but could just be the same colors as their bodies.
I'm not sure about them growing mushrooms where they walk like a moobloom, but when shearing them could yield more back. Lore wise how there is mooshroom cows in the nether would be the mooblooms wandered through an open portal left by a player and got infected by the mushrooms when eating them. (Would be funny to see hoglins running from a warped fungi mooshrooms. )
Or instead of them turning into normal cows when shearing them, their mossy fur turns into a pale off white color (or gray like dead coral) without mushrooms on their body until you feed them another mushroom to grow on their body. I just know feed one should yield more than one when sheared.
