Update Server/Official Mod to 1.21.x minimum

1.20.x is about a year old nearly two years depending on what version you cherry pick. I’m sure the community is looking forward to the now not so new Vanilla update. This update will bring some new mobs, the mace, the enchantments for it, tons of new block variants to build with, the Crafter, and Trial Chambers.
